As a vegetarian in a meat eating family, what can I eat?

Being a vegetarian in a meat eating family, I find it difficult to have a good diet. I need some foods that give me energy, are tasty and good for me, but also cheap and fairly quick to make. Are there any foods in particular you would recommend? I already eat the Quorn line of meat-free foods but I get a bit stuck after that.

Ethnic foods are the best bet for vegetarians and non-vegetarians alike. Chinese fried rice with tofu, Italian pasta and pesto, and Mexican bean tacos are quick to prepare and available to take-out in most cities. Bean and lentil soups, full meal salads, and dishes that feature eggs are easy to fix too. See the Guide to Vegetarian Foods at About.com for hundreds of vegetarian recipes. Several times a day, drink cow's milk or soy milk fortified with calcium and vitamin D for protein.
If you don't feel like your cholesterol is high, no worries, right? Wrong. High cholesterol gives no warnings and could be deadly.
